Makar Sankranti is one of the most prominent and sacred festivals of India, which is celebrated every year on 14th or 15th January. This festival mainly marks the entry of the Sun into Capricorn and the beginning of the days getting longer.

According to the Hindi calendar, this year the festival of Makar Sankranti will be celebrated on 14th January. It is also known by different names in India. This festival is celebrated as Uttarayan in Gujarat, Khichdi in eastern Uttar Pradesh and Pongal in South India.

Donation is of great importance on the day of Makar Sankranti in North India. That is why on this day people donate and feed food to the poor. Along with this, there is a tradition of eating jaggery gajak on this day. In such a situation, today we are going to tell you the method of making market-like gajak at home with an easy method.

Ingredients to make sesame-jaggery gajak

White sesame seeds - 1 cup

Jaggery - 1 cup

Ghee - 1 tablespoon

Cardamom powder - 1/2 teaspoon

Method of making gajak

To make gajak, first heat a clean and dry pan. Add sesame seeds to it and fry on low flame till it becomes light golden and aromatic. Keep the sesame seeds aside to cool.

After this, add 1 tablespoon ghee in the same pan. Add chopped jaggery and 1/4 cup water to it. Cook it on low flame till the jaggery melts completely and becomes a thick syrup. To check the syrup, take cold water in a bowl. Add a few drops of syrup to the water. If it hardens and starts breaking, then the syrup is ready.

After this, add roasted sesame seeds to the prepared syrup. After mixing the sesame seeds, add cardamom powder to it and mix well. After mixing everything well, apply some ghee on a smooth surface.

Spread the sesame and jaggery mixture on the surface while it is still hot. With the help of a rolling pin, flatten it to a uniform thickness. Once the mixture cools down a bit, cut it into desired shapes with a knife.

Finally, let the gajak cool down completely so that it hardens. Store it in an airtight container and enjoy it with family and friends on Makar Sankranti.
