However, a common issue arises when making them at home—instead of being crispy on the outside, they turn soft or absorb too much oil. While they may still taste good, they lack that perfect, market-style crispiness.

Easy tricks for making crispy pakodas
1. Don't make the batter too thin
If the pakoda batter is too thin, the fritters may spread in the oil and fail to crisp up properly. Keep the batter slightly thick.
2. Add rice flour
Mixing 1–2 spoons of rice flour with the gram flour (besan) can give the pakodas a crispier texture.
3. Maintain the right oil temperature
Adding pakodas to oil that is too cool can cause them to absorb excess oil. Conversely, oil that is too hot might cause them to brown quickly on the outside before cooking through. Therefore, heat the oil over medium-high heat before frying.
4. Don't overcrowd the pan
Adding too many pakodas to the pan at once can cause the oil temperature to drop suddenly. This can result in pakodas that are soft and oily rather than crispy.
5. Make smaller pakodas
Very large pakodas take longer to cook thoroughly on the inside. Small or medium-sized pakodas crisp up much more easily.
6. Do not cover immediately after frying.
Placing piping-hot pakoras in a sealed container or a covered vessel right away can cause them to lose their crispiness due to trapped steam. Instead, let them sit on an open plate or a wire rack for a while.
