Old Delhi Fruit Cream Recipe: The mere mention of Old Delhi evokes memories of chaat, kebabs, kulfi, sherbet, and a variety of traditional flavors. Amidst these delights, fruit cream stands out as a dessert that is especially enjoyable during the summer months. Chilled, thick cream combined with pieces of banana, apple, grape, pomegranate, and other seasonal fruits—topped with cashews, almonds, and a hint of cardamom—creates a truly special taste. A good fruit cream should be neither too runny nor so heavy that it overpowers the flavor of the fruit. Preparing it at home requires no complicated steps.

Whipping the cream correctly, ensuring the fruit is completely dry, and chilling the prepared cream in the refrigerator are three small details that can make a significant difference to the taste and texture. If you are craving that authentic Old Delhi-style thick, creamy, and chilled fruit cream, you can easily prepare it at home.
Ingredients needed for Fruit Cream
For about four servings, take 250 ml of chilled whipping cream or fresh cream. Along with this, keep 3–4 tablespoons of powdered sugar, one small apple, one banana, half a cup of grapes, half a cup of pomegranate seeds, and other seasonal fruits of your choice ready. You can use dry fruits like cashews, almonds, and pistachios. A pinch of cardamom powder can also be added to enhance the flavor and aroma. You may also add some raisins if you wish. When selecting fruits, ensure they are fresh and firm; overripe fruits can release water when mixed with the cream, potentially making the texture runny.
Preparing the fruit first
Wash the apples, grapes, and other fruits thoroughly and pat them dry with a clean cloth. Chop the apples into small pieces. If the grapes are large, you can cut them in half. It is best to cut the banana last, as it tends to discolor if left exposed to air for too long. Try to cut all the fruits into roughly uniform, small pieces; this ensures that every spoonful offers a blend of the cream and the distinct flavors of the various fruits. Do not add the fruits to the cream while they are still wet from washing; excess water can make the fruit cream runny.
**Making the cream thick and creamy**
The true appeal of fruit cream lies in its creamy texture. To achieve this, the cream must be well-chilled. Pour the cream into a deep bowl and whisk it using a hand whisk or an electric beater. As the cream begins to thicken, gradually add powdered sugar. Whisk until the cream becomes light, smooth, and thick. Avoid over-whisking, especially when using fresh cream, as excessive whisking can ruin the texture. Finally, add a pinch of cardamom powder and mix gently. You can reduce the amount of sugar if you prefer it less sweet, as fruits like bananas and grapes already provide natural sweetness.
**Adding the fruits**
Add the chopped apples, grapes, bananas, and pomegranate seeds to the prepared cream. Mix in finely chopped cashews, almonds, and pistachios as well. Using a spoon or spatula, gently fold the mixture from the bottom up. There is no need to stir vigorously, as this could crush the softer fruits. You can also add seasonal fruits like mangoes, pears, or sapodilla (chikoo) if you wish; however, it is best to limit the use of fruits that release a lot of water. The more colorful the variety of fruits, the more attractive the dish will look when served.
**Chilling enhances the flavor**
Instead of eating the fruit cream immediately after preparation, refrigerate it for about 30 to 60 minutes. This allows the cream to chill thoroughly and enhances the overall flavor when combined with the fruit. Remember, the goal is to chill it, not freeze it solid. The goal is to keep the fruit cream chilled and creamy, not to let it harden like ice cream. If you are preparing this for guests, you can ready the cream mixture in advance and refrigerate it, adding soft fruits—like sliced bananas—just before serving.

Serve it with an Old Delhi flair
Spoon the chilled fruit cream into small glass bowls or *kulhads* (earthen cups). Garnish with pomegranate seeds and chopped pistachios, almonds, and cashews. You can also add a dollop of *malai* (thick cream) on top to give the dish a richer appearance. Keep in mind that different shops in Old Delhi have their own unique recipes and styles for fruit cream. Therefore, rather than claiming this is a replica of a specific shop's recipe, it is more accurate to describe it as a homemade version inspired by the creamy fruit cream found in Old Delhi.
