Pumpkin is a vegetable which is very beneficial for health. But due to its bland taste, few people like it. Pumpkin vegetable is a very good option to eat during the Navratri fast. If this vegetable is cooked properly, then people eat it by licking their fingers. Today we have brought you a special recipe of pumpkin vegetables worth eating during fasting, in which it can be made delicious by using selected spices. It can be a great option for lunch or dinner. Ingredients for Pumpkin Sabzi
500 grams pumpkin
2 green chillies
10 curry leaves
Half teaspoon fenugreek seeds
One cinnamon stick
Half a teaspoon turmeric powder
Salt to taste
One-fourth teaspoon of red chilli powder
One teaspoon of mustard seeds
Six black pepper
Three tablespoons grated coconut
200 ml coconut milk
Two tablespoons of vegetable oil
Method of making pumpkin sabzi for fasting
First of all, put pumpkin pieces in a vessel. Add green chilies, 5 curry leaves, cinnamon sticks, fenugreek seeds, turmeric powder, salt, red chili powder, and 400 ml water to it. Now boil it and then cook on a medium flame for 12-15 minutes without a lid. Cook it till the pumpkin is soft. You can check it with the tip of a knife.

Meanwhile, put mustard seeds, black pepper, 2 tablespoons of grated coconut, and coconut milk in a blender and grind it finely. Add this paste to the boiled pumpkin and cook for a few minutes till the gravy thickens. Taste and check for salt and turn off the flame.
Heat 2 tbsp oil in a small frying pan. Add remaining 5 curry leaves and saute for 30 seconds. Add 1 tbsp grated coconut and saute till golden and crisp. Garnish the curry with this.
