In the villages of Rajasthan, women make this traditional black carrot halwa using a unique recipe. Made with fresh black carrots, milk, and desi ghee, this halwa keeps the body warm in the winter chill. Whether it's the morning chill or after evening tea, hot carrot halwa makes every occasion special.

According to food blogger Kalpana Sharma, black carrot halwa is delicious and nutritious. To make it, take 1 kg of grated black carrots, 2 cups of milk, 1 cup of sugar or jaggery, 2 to 3 tablespoons of desi ghee, half a cup of khoya (reduced milk solids), half a teaspoon of cardamom powder, and cashews, almonds, and raisins. Heat the ghee in a pan and sauté the carrots. Add milk and cook. When it thickens, add sugar, khoya, and dry fruits. When it becomes fragrant, the halwa is ready. This sweet dish is excellent for both health and taste during the winter. Do try making it at home.

Food blogger Kalpana Sharma explained that to make black carrot halwa in the Rajasthani style, first take fresh, local black carrots. Wash and peel the carrots thoroughly and then grate them finely. Black carrots are a bit hard, so it's important to grate them finely. Now heat pure desi ghee in a heavy-bottomed pan. Once the ghee is hot, add the grated black carrots and sauté them over medium heat, stirring continuously, so that the raw taste of the carrots disappears and they become fragrant.

After the carrots become slightly soft, add full-cream milk. After adding the milk, reduce the heat and stir the mixture occasionally so that the milk doesn't stick to the bottom. Black carrots take time to cook completely. When the milk gradually thickens and the carrots have absorbed all the milk, add jaggery or sugar to taste and stir continuously to prevent it from sticking to the pan.

Once the sugar has dissolved, add cardamom powder and a little dry ginger powder to the halwa and mix well to enhance its flavor and aroma. Now add homemade khoya (reduced milk solids) and sauté on low heat for 5 to 7 minutes. When the halwa starts to leave the sides of the pan and the ghee separates, add chopped cashews, almonds, and raisins. Turn off the heat and serve the hot, traditional Rajasthani black carrot halwa.
