Ingredients
White sesame seeds – 1 cup
Jaggery – 1 cup
Ghee – 1 teaspoon

Instructions

To make gajak at home, first take a heavy-bottomed pan or wok and roast the white sesame seeds over low heat. Keep stirring the sesame seeds continuously to prevent them from burning. When the sesame seeds turn light golden brown and become fragrant, turn off the heat and transfer them to a plate. Now, add the jaggery to the same pan and melt it over low heat.

Do not cook the jaggery over high heat; otherwise, it may burn and spoil the taste of the gajak. When the jaggery is completely melted and starts to bubble slightly, add a teaspoon of ghee and mix well. Then, add the roasted sesame seeds to the melted jaggery and stir quickly so that the sesame seeds and jaggery mix well. As soon as the mixture is ready, turn off the gas.

Now, grease a plate or tray with a little ghee and spread the hot mixture on it. Gently roll it out with a rolling pin and cut it into desired shapes with a knife. Let the gajak cool down. Once cooled, the gajak will become hard and crispy and ready to eat.
