As soon as the rainy season arrives, one craves piping hot pakoras and samosas with tea; however, consuming fried foods daily can be detrimental to health, especially since the digestive system tends to slow down during the monsoon. If you are looking for a balance between taste and health, *besan chilla* (gram flour pancake) proves to be an excellent option. It is a quick, light, nutritious, and delicious breakfast dish. Chef Priyanka Singh notes that *besan chilla* is one of the easiest and healthiest recipes for breakfast.

Gram flour is rich in protein and fiber, which keeps the stomach feeling full for a longer period and provides energy to the body. This is why it is a favorite dish for everyone, from children to adults. To prepare it, first take the required amount of gram flour in a bowl. Add finely chopped green chilies, a little red chili powder, carom seeds (*ajwain*), and salt to taste, then mix well. Next, gradually add water to prepare a smooth batter. Ensure there are no lumps and that the consistency is neither too thin nor too thick.
Make crispy *besan chilla* in minutes
Now, heat a non-stick *tawa* (griddle) or pan over medium heat. Using a ladle, pour the batter into the center of the pan and spread it into a round shape. Cook the *chilla* on one side until golden, then flip it over, apply a little oil, and cook the other side thoroughly. Once it is crispy and golden on both sides, transfer the *chilla* to a plate. According to Priyanka Singh, green chilies add a zesty kick to the *chilla*; however, those who dislike spicy food or are preparing it for children can easily make it without the green chilies.
