Mustard seeds (rai) - 1 teaspoon
Cumin seeds - 1 teaspoon
Nigella seeds - 1 teaspoon
Dried red chilies - 2-3
Cooking oil - 1 teaspoon
Lemon juice - 1

Easy method of preparation
Step 1: Preparing the green chilies and green garlic
To make the pickle, first wash the green chilies and green garlic thoroughly with water. Then, finely chop them into small pieces. If you like the pickle spicy, use a little more green chilies.

Step 2: Prepare the pickle masala
After chopping the green chilies and green garlic, take a pan and add the mustard seeds, cumin seeds, fennel seeds, nigella seeds, and dried red chilies, and fry them thoroughly over medium heat until they turn brown. When the spices turn golden and begin to smell fragrant, turn off the heat. Transfer these spices to a separate bowl. Now grind these roasted spices thoroughly in a mixer with a little salt.

Step 3: Mix the Spices
To make the pickle, mix the chopped garlic and green chilies with the ground spice powder in a bowl. Add a little mustard oil and mix thoroughly with a spoon or your hands.

Step 4: Add all the ingredients to the hot oil.
Pour mustard oil into a pan and let it heat for a while over medium heat. Add a little cooking oil. Once the oil is hot, add all the ingredients to the pan and mix well with the oil. You can add lemon juice to enhance the flavor.

Step 5: Serve
Place the prepared pickle into a clean, dry jar and seal it with the lid. The jar should always be dry and clean. Your instant pickle is ready, which you can eat anytime with roti, paratha, dal-rice or snacks.
