Tandoori tea is a special kind of tea which is prepared by boiling tea in a hot earthen pot. First, the Kulhar is heated on high flame, then the prepared tea is poured into it. As soon as the tea comes in contact with the hot Kulhar, it boils, smoke comes out of it and the same smoke gives it that special 'Tandoori taste' which is not there in any other tea.

Ingredients to make Tandoori Chai

1 cup milk

1 cup water

2 tsp tea leaves

Sugar to taste

2-3 cardamoms (crushed)

1 small piece of ginger (grated)

1 small clay kulhar

Gas tongs or grill

Tandoori Chai Recipe

Step 1: Prepare the tea

Add water, tea leaves, ginger and cardamom in a vessel and bring to a boil.

When the tea starts to leave color, add milk and sugar.

Simmer well so that the tea becomes thick and spicy.

Step 2: Turn the Kulhar into a tandoor

Place the clay kulhar directly on the flame (even better if you have a BBQ grill).

Keep roasting it till it becomes very hot (light black or starts burning).

Step 3: The magic moment

Place the hot kulhar in a steel bowl or cup.

Now slowly pour the tea in it.

The moment the tea hits the kulhar, it will start boiling and smoke will come out of it - this is where the real tandoori flavour comes from.

Step 4: Serving style

Now serve this tea by pouring it in another kulhar or cup.

If you want, you can sprinkle some powdered cinnamon or cardamom on top.

Special tips

If the clay kulhar is new, then first soak it in water, so that it does not break.

If you do not have a stand or grill to keep it on the gas, then you can also heat the kulhar in the oven.

Do not heat the kulhar once used - it is not considered right in tradition and also spoils the taste
