Nowadays, people are becoming more health-conscious and are avoiding foods made with refined flour (maida). While this is a positive trend, it often means giving up favorite dishes and sweets. To address this, we are sharing a recipe for healthy and delicious coconut cookies that do not use refined flour. This recipe satisfies your sweet cravings while keeping your health in mind.

**Zero-Maida Coconut Cookies Recipe**
If you are avoiding refined flour, these coconut cookies are an excellent choice. Here is the recipe:

**Ingredients**
1/2 cup desiccated (dry) coconut

1 cup wheat flour

1/2 cup semolina (sooji)

1/4 teaspoon baking soda

5 tablespoons butter

1/2 cup powdered sugar or *boora* (fine powdered sugar)

1/4 teaspoon salt

1 tablespoon cashews or almonds (optional)

3-4 tablespoons water or milk

**Method**
To make the coconut cookies, whisk the butter and powdered sugar thoroughly in a large bowl.

Ensure you whisk the mixture—using a spatula—until it becomes creamy in texture.

Next, mix in the wheat flour, semolina, salt, and baking powder.

If the mixture feels too dry after adding these ingredients, add a little water or milk and mix well.

Now, knead the mixture into a soft dough.

Divide the dough into small, round balls.

Gently flatten them using your palms.

 

In this step, prepare the coconut for coating the cookies.

You can use either fresh grated coconut or desiccated coconut; each offers a unique flavor.

If using fresh coconut, incorporate it directly into the dough while kneading. If using dry coconut, coat the dough balls with desiccated coconut.

Grease and preheat the baking tray, then place the dough balls on it.

In this step, bake them in the oven at 170°C for 15 minutes.

If you do not have an oven, place salt and a stand inside a heavy-bottomed pan (kadhai) and heat it until very hot.

Then, let them cook for at least 15–20 minutes.
