Bitter gourd may be bitter, but it is very beneficial for health. Bitter gourd is not only eaten as a vegetable but also as a pickle. It is helpful in keeping blood sugar under control. Bitter gourd pickle is like a medicine for diabetes patients. Similarly, many people may not like bitter gourd vegetable, but if they get its pickle, they eat it with great pleasure. Today, we are going to tell you the recipe. It can be made both as stuffed and chopped bitter gourd. A small variety of bitter gourd is more useful for stuffed bitter gourd, and the long variety of bitter gourd is more useful for making chopped bitter gourd pickle. This pickle can be stored in a glass jar.

Ingredients
Bitter gourd – 1/2 kg
Mustard – 4 tsp
Cumin – 2 tsp
Fenugreek seeds – 2 tsp
Ajwain – 1 tsp
Asafoetida – 1/4 tsp
Turmeric – 1 tsp
Fennel powder – 2 tsp
Red chilli powder – 1/2 tsp
Garam masala – 1/2 tsp
Vinegar – 1/4 tsp
Mustard oil – 1/2 tsp
Black salt – 1 tsp
Plain salt – 3 tsp (according to taste)
Method
- First of all, take bitter gourds and wash them thoroughly 2-3 times in clean water. After this, keep the bitter gourds for drying.
- When the bitter gourds dry, cut off the stalks on both sides and separate them. Now, cut the bitter gourd into thin, round pieces.
- Put the chopped bitter gourd in a bowl, add one teaspoon of salt, mix it, and keep it covered for half an hour.
- After half an hour, take the bitter gourd and wash it thoroughly twice. After this, keep the bitter gourd on a cotton cloth and keep it to dry for 1-1.30 hours.
- After the stipulated time, wipe the bitter gourd thoroughly. Now, take a pan and keep it on a medium flame for heating.
- Add cumin seeds, fenugreek seeds, and carom seeds, and dry roast them till they become light brown. After this, cool these spices and grind them coarsely.
- Now, put mustard oil in a pan and keep it on a medium flame for heating. After this, add asafoetida and bitter gourd in the oil.
- Add turmeric powder on top, mix it well, and fry the bitter gourd for 4-5 minutes so that it becomes soft properly. After this, turn off the gas, add all the roasted spices, and mix.
- After this, add fennel powder, black salt, garam masala, red chili powder, vinegar and salt and mix well. Bitter gourd pickle is ready.
