It's often called a 'vegetarian omelet' or 'desi pizza'. It's so delicious that everyone, from children to adults, will be licking their fingers. The best part is that it's rich in protein, meaning it will take care of your health while satisfying your taste buds.
Why is Moonglet special?
This dish, made from moong dal (split green gram) is very light and easily digestible. It's the best breakfast option for those who want to lose weight or go to the gym. Believe me, every bite of this crispy on the outside and fluffy soft on the inside moonglet will make you happy.
Ingredients for making Moonglet
You don't need much to make it. Just a few things available in your kitchen:
Moong dal (yellow): 1 cup (soaked for 2-3 hours)
Vegetables: 1 onion, 1 tomato, a little capsicum (all finely chopped)
Ginger-chili paste: 1 teaspoon
Spices: Salt, a pinch of turmeric, a little red chili powder, and asafoetida
Baking soda: half a teaspoon (this will make it fluffy)
Butter or oil: for cooking
How to make Moonglet
First, grind the soaked moong dal in a blender. Make sure the paste is neither too thin nor too thick. Now transfer this paste to a bowl and whisk it well with a spoon for 2-3 minutes. The lighter the batter, the fluffier the moonglet will be.
Now add all your chopped vegetables and spices (salt, chili powder, asafoetida) to this batter. You can also add sweet corn if you like; it gives it a pizza-like feel.
Heat a griddle or pan. Now add the baking soda to the batter and mix gently. You will see the batter starting to rise. Don't delay any further.
Pour a little butter onto the pan and spread the batter. Keep it thick (like a pancake). Cook it covered over low heat. When the bottom layer is golden brown and crispy, flip it over. Make a small cut in the center with a knife and add a little more butter so that it cooks through completely.
Serve the hot moonglet with green chutney and sweet and sour tamarind chutney. A cup of strong tea alongside will double the enjoyment of this breakfast.
