Corn Flour Dhokla Recipe: Corn flour dhoklas are commonly made in almost every household in the Mewar region, including Bhilwara, and are considered an important part of the traditional and nutritious food culture here. This dish is especially popular in every kitchen during the winter season. Sometimes, leftover dhoklas remain after dinner, which people often throw away, considering them useless. However, with a little ingenuity, these same dhoklas can be easily transformed into a delicious and useful breakfast. This tradition also reflects the identity of Mewar.

Even today, in both rural and urban areas, the problem of what to prepare quickly for breakfast often arises in the morning. In such situations, leftover dhoklas become a simple and reliable option. They don't take much time to prepare, and all family members get a filling meal. This method simplifies kitchen work and reduces the workload on women.

Leftover dhoklas from the previous night can be cut into small pieces and used in the morning. Heat a little oil in a pan and temper it with mustard seeds, cumin seeds, asafoetida, and curry leaves. Then add onions, green chilies, tomatoes, and any available seasonal vegetables and sauté well. Finally, add the dhoklas and stir with light spices; this completely transforms their taste. Garnishing with fresh coriander makes the dish visually appealing and gives it a completely new flavor. Everyone in the family loves it.

The method of making dal-dhokla from corn flour is very simple. To make fresh dhokla, first soak one cup of moong or arhar dal for 2 hours and then boil it. Then, in two cups of corn flour, add turmeric, salt, carom seeds, and a little ginger-garlic paste, and knead a stiff dough with lukewarm water. Now, make small balls or rolls from this dough and cook them in boiling water for 10-15 minutes. Then, add the boiled dhoklas to the lentil mixture and let it simmer on low heat for some time so that the flavors meld together.

Finally, prepare a tempering of ghee, cumin seeds, asafoetida, garlic, and green chilies, and pour it over the dish. Garnish with fresh coriander leaves. This traditional dish is delicious and provides essential nutrients to the body. Cornmeal is rich in fiber and iron, which strengthens the digestive system, while moong dal is rich in protein and antioxidants, which energize the muscles.
