Ayurveda recognizes curd as beneficial for digestion. It has long been a staple of the daily meal in South India, where people consume it—especially in hot and humid regions—to keep their bodies cool. It is also distributed as *Prasad* (a sacred offering) in many South Indian temples. It is considered a *Sattvic* food because it is light, simple, and easy to digest.

Curd has a cooling nature, which helps balance the body's temperature. The probiotics—or "good bacteria"—present in curd aid in improving digestion, offering relief from issues like gas, indigestion, and heartburn.

In Maharashtra and Gujarat, it is known as 'Dahi Bhat.' Despite the varying names and flavor profiles, its fundamental identity remains the same. In Tamil Nadu, it has a mild taste, whereas in Karnataka, ingredients like pomegranate or grapes are sometimes added.
In Andhra Pradesh, people prefer it with a slightly spicy kick. In Odisha, the dish is popular during summer under the name 'Dahi Pakhal.' Meanwhile, in Bengal, known as 'Doi Bhat,' it is considered a simple yet comforting meal.
