Milk and dairy products help replenish essential nutrients, including calcium. Including them in your diet is crucial; however, rising instances of adulteration make one think twice before buying them from the market.
"Analog paneer" (imitation cottage cheese) is currently a topic of discussion; it is made using ingredients like refined flour (maida), arrowroot, detergent, palm oil, and synthetic chemicals. Given this, making paneer at home is the best option—ensuring no compromise on either taste or quality.

How to make paneer at home?
While the process might be slightly time-consuming, it is beneficial for your health. Here is how to make it:
Ingredients
2 liters full-cream milk
2 tablespoons lemon juice
Method
To make paneer, first boil the milk in a pan.
Boil the milk over medium-high heat for at least 8–10 minutes, stirring occasionally with a spoon.
Ensure the milk does not stick to the bottom of the pan.
When the milk starts to rise, turn off the heat and let it sit for a minute.
Now, gradually add the lemon juice while stirring the milk continuously.
Remember to add the acidic agent (lemon juice) only after the milk has come to a boil.
If the milk does not curdle after adding 2 tablespoons of lemon juice, you can add a little more. Keep in mind, however, that using too much acid can make the paneer tough.
Observe the milk closely; once it curdles, you will see whey (a watery liquid) separating and floating.
Next, set up a strainer and place it over a bowl.

If you want crumbled paneer, simply strain the mixture through a muslin cloth after two minutes.
You can rinse the paneer with a little water beforehand to remove any sourness from the lemon.
Alternatively, to make a solid block of paneer, place a heavy weight on top of it. You can also use a paneer mold for this purpose. Leave this weight on it for at least 1–2 hours.
Your pure, homemade *paneer* is ready.
