Kattu Dosa Recipe: People often feel that food options are limited during fasting. In most households, *Kattu* (buckwheat) *puris*, *pakoras*, or deep-fried snacks are prepared, but not everyone enjoys eating these daily. If you are looking for a light, delicious, and low-oil *Falahari* (fasting-friendly) dish during the month of *Sawan*, then *Kattu Dosa* is an excellent choice.

This recipe is not only delicious but also quick to prepare. The best part is that the buckwheat flour does not require soaking or grinding. Ready in just a few minutes, this dosa turns out crispy and tasty. A spicy potato filling further enhances its flavor. Buckwheat flour is considered a good source of nutrients like protein, iron, and zinc, making it helpful in providing energy to the body during a fast.
Ingredients for Kattu Dosa
For the Dosa
1 cup buckwheat flour (*Kattu ka atta*)
2 tablespoons yogurt (*dahi*)
1/2 teaspoon rock salt (*sendha namak*)
1/2 cup water
2 tablespoons oil
For the Filling
2 medium-sized boiled and mashed potatoes
1 finely chopped green chili
1 teaspoon grated ginger
1/3 teaspoon cumin seeds (*jeera*)
1/4 teaspoon black pepper powder
Rock salt to taste
1 tablespoon oil
Method
First, combine the buckwheat flour, yogurt, and water in a bowl and whisk well to create a smooth batter. Add the rock salt, mix, and set the batter aside for 5 minutes.
Next, heat oil in a pan. Add cumin seeds, followed by ginger and green chili, and sauté lightly. Then, add the rock salt, black pepper, and mashed potatoes, mixing everything thoroughly. Cook for a few minutes and then turn off the heat. Your filling is ready.
Now, lightly heat a dosa *tawa* (griddle) or a non-stick pan. Pour a ladleful of batter and spread it into a round shape. After cooking for a minute, drizzle a little oil over the top and cook the other side until golden brown.
Place two spoonfuls of the potato stuffing in the center of the dosa. Then, fold the dosa using a spatula and serve hot.
If you prefer, this recipe can also be made using amaranth flour. If you are in a rush, this dosa tastes delicious even without the stuffing when served with curd.
