Easy Lauki Recipes: Lauki is such a dish, which not only children but also adults make faces at. But now that the summer season is going on, only vegetables like lauki, tinda, parwal, and ridge gourd are available in the market. In such a situation, it becomes quite difficult to feed these vegetables to children.

That is why we are going to tell you about two such recipes, which not only the children of your house but also the elders of the house will eat with great gusto. In this article, we will tell you how to make lauki ka paratha and lauki ka raita, so that you can easily make and consume them in the summer season.
Lauki Paratha
Wheat flour – 2 cups
Lauki (grated) – 1 cup
Green chilli – 1
Salt
Turmeric – ¼ tsp
Red chilli – ¼ tsp
Ajwain – ½ tsp
Coriander leaves – 2 tsp
Oil/ghee
Method
This Lauki Paratha will be so delicious that the children of the house will ask for it again and again. The first thing to do to make it is to grate the lauki and squeeze it well. Squeeze it completely and then add oil and all the spices in the pan and fry the lauki lightly. Frying will also dry up the remaining water. Now cool this masala.
While it is cooling, apply the dough. When the dough is kneaded, cover it and keep it for a while. Now make a dough of this dough roll it a little and fill the lauki masala in it. After this, roll it very thin. After this, fry the paratha in a pan with ghee or oil. Take it out when both sides are golden. Serve with curd or pickle.
Ingredients for making Lauki Raita
Lauki (grated) – 1 cup
Curd – 1.5 cups (fresh and whipped)
Salt – according to taste
Roasted cumin powder – ½ tsp
Black pepper powder – ¼ tsp
Green chilli – 1
Green coriander
Method
Now it is the turn to make Lauki Raita, for this also, first of all, you have to grate the lauki. After grating it, boil the lauki in some water. You just have to boil it for 2 to 3 minutes. Take care that it does not suffocate.

When it is ready, take out the cold curd from the fridge and whisk it. After this, squeeze the boiled lauki with your hand and remove its water. When it is squeezed well, add it to the beaten curd and mix it with salt, roasted cumin seeds, and black pepper. To enhance the taste, you can also add finely chopped coriander leaves and green chilies on top.
