Pumpkin curry is a common dish in Indian households, but its flavor is significantly enhanced when prepared in the style of traditional caterers or feasts. The sweet-and-sour pumpkin curry served at weddings, banquets, and religious gatherings in North India is a favorite among many. The aromatic spices and the subtle sweetness of jaggery make it truly special. If you wish to recreate that feast-like taste at home, do try this recipe.

Ingredients
500g pumpkin (cut into medium-sized pieces)
2 tbsp mustard oil
1 tsp cumin seeds
½ tsp fenugreek seeds (methi dana)
2 dried red chilies
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
½ tsp garam masala
1 tbsp fennel seed powder (saunf powder)
1 tbsp dry mango powder (amchur)
1–2 tbsp jaggery
Salt to taste
Fresh coriander leaves for garnishing
Method
First, wash and peel the pumpkin, then cut it into medium-sized pieces. Heat the mustard oil in a pan (kadhai). Once the oil is hot, reduce the heat and add the cumin seeds, fenugreek seeds, and dried red chilies.
When the spices begin to crackle, add the turmeric, red chili, and coriander powders, and sauté for a few seconds. Now, add the pumpkin pieces and mix well with the spices. Sauté over medium heat for about 4 to 5 minutes.
Next, add salt, cover the pan, and let it cook for 8 to 10 minutes. Stir occasionally to prevent the vegetable from sticking to the bottom. When the pumpkin begins to soften, add the fennel powder, dry mango powder, and jaggery.
Mix everything thoroughly. Once the jaggery melts, it will impart a sweet-and-sour flavor to the dish—a hallmark of feast-style pumpkin curry. If needed, you can add 2–3 tablespoons of water. Cook the vegetable over a low flame for another 5 minutes. Once the pumpkin is completely tender and has absorbed the spices, add the *garam masala* and turn off the heat.
Tips to enhance the flavor
Use mustard oil to achieve a taste reminiscent of a festive feast.
The balance between jaggery and dry mango powder (*amchur*) is the true essence of this dish.
You can also add some crushed fennel seeds and whole coriander seeds if desired.
It tastes exceptionally delicious when served with *pooris*.

Serving suggestion
