Raw Jackfruit Pickle Recipe: Even a small bowl of pickle can transform the taste of a home-cooked meal. Whether it is roti, paratha, or simple dal-chawal, the meal becomes far more enjoyable with pickle. If you have grown tired of the usual mango, lemon, and chili pickles, you can try making something different this time using raw jackfruit. Jackfruit pickle is tangy, spicy, and flavorful.

The best part is that it does not require a long list of ingredients. The combination of mustard oil and traditional spices gives it a unique taste. If the jackfruit is prepared correctly and all moisture is removed, this pickle becomes a perfect accompaniment to home-cooked meals.
Getting started with raw jackfruit
To make jackfruit pickle, take about 1 kg of raw jackfruit. You will also need 4–5 tablespoons of mustard seeds, 2 tablespoons of fennel seeds, 1 tablespoon of fenugreek seeds, and 1–2 tablespoons of nigella seeds (kalonji). For flavor, take 2 tablespoons of red chili powder, 1 teaspoon of turmeric powder, and salt. To add tanginess, you can use 3–4 tablespoons of vinegar or lemon juice. Keep about 1 to 1.5 cups of mustard oil ready as well. It is advisable to apply a little oil to your hands and the knife before cutting the jackfruit. Peel the jackfruit and cut it into medium-sized pieces. After washing the pieces, it is crucial to dry them thoroughly.
Do not overcook the jackfruit
You can lightly boil the jackfruit pieces, but do not let them become completely soft. Cook them only until they soften slightly while retaining their shape. After boiling, remove the jackfruit from the water and spread the pieces out on a cloth or a large plate. Allow them to cool and dry completely; any remaining moisture can affect both the taste and the shelf life of the pickle. So, do not rush this step. The better the jackfruit dries, the better the spices will adhere to it.
**Infuse the pickle with the flavor of traditional spices**
Next, lightly roast mustard seeds, fennel seeds, and fenugreek seeds in a pan. There is no need to brown or blacken the spices excessively. Once the aroma is released, turn off the heat and let the spices cool down. Grind the cooled spices coarsely. Place the dried jackfruit pieces in a large bowl. Add the ground spice mix, nigella seeds (kalonji), red chili powder, turmeric, and salt, then mix thoroughly. Ensure that the spice mixture coats every piece well.
**Mustard oil delivers the authentic pickle flavor**
Now, heat mustard oil in a pan. Once the oil is hot, turn off the heat and allow it to cool slightly. Pour the warm oil over the jackfruit and spices. Then, add vinegar or lemon juice and mix everything well. Use a clean, completely dry glass jar to store the pickle. Transfer the prepared pickle into the jar and add a thin layer of oil on top as needed, ensuring the jackfruit pieces remain well-coated with the spices and oil.
**Let it rest before serving**
The prepared jackfruit pickle can be tasted immediately, but allowing it to sit for a while lets the flavors of the spices infuse thoroughly into the jackfruit. Store the jar in a clean, dry place and always use a dry spoon when serving; avoid consuming the pickle if you notice any moisture, mold, or an unpleasant odor.
