Homemade Chyawanprash Recipe: Store-bought Chyawanprash often contains preservatives and extra sugar, but if you make it at home, you can completely control its purity and nutritional value. Homemade Chyawanprash uses fresh Amla (Indian gooseberry), which is a treasure trove of Vitamin C. Easy Recipe to Make Chyawanprash at Home

Fresh Amla (Indian gooseberry) 500 grams
Ghee 2-3 tablespoons
Jaggery or Honey 300 grams (to taste)
Spices (Powder)
Cardamom powder 1 teaspoon
Cinnamon powder 1/2 teaspoon
Dry ginger powder 1/2 teaspoon
Long pepper powder 1/2 teaspoon
Black pepper powder 1/4 teaspoon
Method
First, wash the Amla thoroughly and boil them in a pressure cooker until 2-3 whistles or until they are completely soft.
Once the Amla have cooled, remove and discard the seeds and put the boiled Amla in a blender or food processor to make a coarse paste. Do not add water.
Heat the ghee in a heavy-bottomed pan or kadhai. Once the ghee is hot, add the Amla paste and sauté it over medium heat. Sauté it until it turns light brown and starts leaving the sides of the pan.
Once the Amla paste is well roasted, add jaggery or honey. If you are using jaggery, melt it first with a little water and strain it before adding it to the paste. Reduce the heat to low and stir continuously to prevent it from sticking to the bottom. When the mixture starts to thicken and resembles jam, add all the dry spices (cardamom, cinnamon, dried ginger, long pepper, and black pepper powder) and mix well.

Cook for another 5-7 minutes, until it thickens to the consistency of Chyawanprash. Turn off the heat and let it cool completely. Once cooled, transfer it to a clean, dry glass jar.
