Who doesn't love eating ice cream during the summer season? However, store-bought ice cream often contains artificial flavors, excessive sugar, and preservatives, which are not good for your health. If you want to make creamy and smooth ice cream at home—just like the kind you find in the market—then this recipe is for you. It is easy to prepare, and the taste is absolutely delicious.

**Ingredients:**
Full-cream milk – 1 liter
Fresh cream (Malai) – 1 cup
Cornstarch – 2 teaspoons
Milk powder – 3 teaspoons
Sugar – ½ cup (or to taste)
Vanilla essence – 1 teaspoon
Your favorite dry fruits (Cashews, Almonds) – Finely chopped
**Preparation Method:**
**Thicken the Milk**
First, pour the milk into a heavy-bottomed pan (or *kadhai*) and bring it to a boil over low heat. Stir the milk occasionally to prevent it from sticking to the bottom of the pan. Continue cooking the milk until it reduces to about half its original volume; this will give the ice cream its rich consistency.
**Dissolve the Cornstarch and Milk Powder**
Take a small amount of cold milk in a bowl and mix in the cornstarch and milk powder to form a smooth slurry. Ensure that no lumps are remaining in the mixture.
**Add the Mixture to the Milk**
Now, pour this slurry into the boiling milk while stirring continuously. Within a few minutes, the mixture will begin to thicken.
**Add Sugar and Cream**
Next, add the sugar and allow it to dissolve completely. Then, add the fresh cream and cook for another 2–3 minutes; this step will give the ice cream that creamy, market-style texture.
**Cool and Whip**
Turn off the heat and allow the mixture to cool down completely. Once cooled, transfer it to a blender or mixer and whip it for 2–3 minutes; this incorporates air into the mixture, ensuring the ice cream turns out soft and fluffy.
**Freeze**
Now, mix in the vanilla essence and chopped dry fruits. Pour the mixture into an airtight container and place it in the freezer for 8–10 hours to set.
**Serving Suggestion**
Once the ice cream has set, scoop it out and serve. Serve topped with chocolate syrup or dry fruits.

Conclusion
The ice cream prepared using this simple recipe tastes, feels, and has a texture exactly like store-bought ice cream—but without any chemicals. Give it a try; everyone in your household is sure to praise it!
