Often, after festivals or religious ceremonies, we are left with a significant amount of dry coconut at home. We often don't know what to do with it, and it ends up sitting in a kitchen container for months. If this happens to you too, there is no need to worry anymore.

Today, we bring you a fantastic recipe that allows you to transform that dry coconut into delicious, melt-in-the-mouth coconut *barfi* (fudge) that rivals what you get at sweet shops. It is as easy to make as it is delightful to eat.

**Ingredients Required for Coconut Barfi**
Dry coconut: 2 cups (grated or ground in a mixer)
Milk: 1 cup (full-cream milk is preferable)
Sugar: 3/4 cup (adjust according to taste)
Cream (*malai*) or milk powder: 1/2 cup (to give the *barfi* a rich, *khoya*-like taste)
Desi ghee: 2 tablespoons
Cardamom powder: 1/2 teaspoon
Chopped dry fruits: Almonds, pistachios (for garnishing)

**Easy Method to Make Coconut Barfi**
First, grate the dry coconut. If you want a smooth *barfi* texture similar to store-bought ones, pulse the grated coconut in a mixer to make it finer.
Next, place a *kadahi* (wok) or pan on the stove and add the *desi ghee*. Once the ghee is slightly warm, add the ground coconut. Roast it over a low flame for 2 to 3 minutes, stirring continuously. Ensure the coconut does not change color; you simply want it to release a pleasant aroma.
After roasting the coconut, add the milk and the cream (or milk powder). Mix well and let it cook over medium heat.

Once the coconut has absorbed all the milk, add the sugar. The mixture will release some moisture upon adding the sugar, so continue cooking until it thickens and starts leaving the sides of the pan. Once the mixture begins to bind together like dough, turn off the heat, add the cardamom powder, and mix well.
Grease a plate or tray with a little ghee. Transfer the hot mixture onto the plate and spread it evenly into a square shape using a spoon or a small bowl.

Sprinkle chopped almonds and pistachios over the top and press them down gently so they set into the barfi. Allow it to set for 2–3 hours at room temperature or in the refrigerator.
If you do not have *malai* (milk cream) or milk powder, you can use condensed milk instead; however, if using condensed milk, reduce the amount of sugar.

Lightly grease your knife with ghee before cutting the barfi; this ensures clean, neat cuts. And there you have it—soft, grainy, and delicious barfi made from dry coconut, ready to enjoy.
