Kathal KI Sabji: There is hardly anyone who would not like to eat jackfruit vegetables. Especially now that the summer season has started, jackfruit vegetable tastes even more delicious. If it is served with rice or hot roti-paratha, then eating it makes the day.

Ingredients for making jackfruit vegetable
Jackfruit – 500 grams
Onion – 2
Tomatoes – 2 (you can also use puree)
Garlic
Ginger – grated
Green chillies
Turmeric powder – 1/2 teaspoon
Red chilli powder – 1 teaspoon
Coriander powder – 1 tablespoon
Garam masala – 1/2 teaspoon
Salt
Oil – 3-4 tablespoons
Green coriander
Method
To make jackfruit vegetables, you will have to work a little hard, but when you eat it, you will forget all the tiredness. To make it, first peel the jackfruit and cut it into small pieces. Although nowadays cut jackfruit is also available in the market, so you can buy it too.
After cutting the jackfruit into pieces, put it in salty water and boil it. Let it boil in water for about 5 to 7 minutes. If you do not want to boil it, then put some oil in a pan add jackfruit and fry it till it becomes golden. After the jackfruit is ready, keep it aside.

After this, heat mustard oil in a heavy bottom pan. After the oil is heated, add garlic, ginger and green chilies and fry it. When it is fried, add onion to it and let it also become golden.

Now add tomato, turmeric, coriander powder, red chili powder and fry it well. When it starts leaving oil, add boiled or fried jackfruit to it. Meanwhile, add salt and garam masala and mix it well.

Now you have to cover it and cook it for at least 15 minutes. When it is cooked properly, add chopped coriander on top and mix. Now turn off the gas and serve it with rice or paratha.
