The month of Sawan has begun. During this month, everyone immerses themselves in devotion to Lord Shiva. Many people also observe fasts on Mondays throughout the month. As part of the fasting diet (*falahar*), people often eat rotis made from *Kuttu* (buckwheat) flour, which is an excellent source of energy.

However, people often complain that their rotis turn out very hard or tend to break while rolling or cooking. If you face this issue too, here is how you can make perfectly soft *Kuttu* rotis.

**Ingredients for Kuttu Flour Roti:**

*Kuttu* flour (Buckwheat flour) – 2 cups
Boiled and grated potatoes – 2 medium-sized
Rock salt (*Sendha Namak*) – to taste
Finely chopped fresh coriander – 2 spoons
Finely chopped green chili – 1
Lukewarm water – as required
Desi ghee or peanut oil – for cooking and for the dough mix (*moyan*)

**Method for Making Kuttu Flour Roti:**

First, sift the *Kuttu* flour into a large mixing bowl or *parat*. Add the grated boiled potatoes, rock salt, green chili, and fresh coriander to it.

Now, mix the ingredients well with your hands without adding water, ensuring the potatoes blend thoroughly with the flour. Then, gradually add lukewarm water and knead the dough. Kneading with lukewarm water helps make the rotis soft.

Be careful with the amount of water while kneading; otherwise, the dough might become too sticky or wet.

Finally, apply half a teaspoon of ghee over the dough and cover it, letting it rest for 5 to 10 minutes. This allows the dough to set properly and prevents the rotis from cracking. Next, take portions of the kneaded dough, dust the rolling board with some dry buckwheat flour, and roll out the dough.

Carefully lift the rolled-out flatbread and place it onto a hot griddle. Flip it over once the underside is lightly cooked.

Cook the flatbread on both sides. Your buckwheat flour flatbread is now ready.
