Serves - 2-3 people
Ingredients -
For Idli -
Idlis - 5-6 (leftover or cold idlis are best)
Oil or Ghee - 2 tablespoons
For Tempering and Spices -
Mustard Seeds - 1/2 teaspoon
Cumin Seeds - 1/2 teaspoon
Curry Leaves - 8-10
Asafoetida - 1 pinch
Onion - 1 medium (finely chopped)
Tomato - 1 medium (finely chopped)
Capsicum - 1/2 (finely chopped - optional)
Green Chillies - 2 (finely chopped)
Ginger-Garlic Paste - 1 teaspoon
Dry Spices -
Turmeric Powder - 1/4 teaspoon
Red Chili Powder - 1/2 teaspoon (to taste)
Pav Bhaji Masala or Sambar Masala - 1 teaspoon
Salt - to taste
For garnish -
Green coriander - finely chopped
Lemon juice - 1 teaspoon
Method of preparation
First, cut the idlis into small square pieces.
Heat oil in a pan. Once the oil is hot, add mustard seeds, cumin seeds, asafoetida, and curry leaves.
Add green chilies and chopped onions. Fry until the onions turn light pink. Then add ginger-garlic paste and capsicum and fry for 1-2 minutes.
Add chopped tomatoes and a little salt. When the tomatoes soften and begin to release oil, reduce the heat and add turmeric, red chili powder, and pav bhaji masala (or sambar masala). Fry these spices for a minute.

Then add the chopped idlis. Mix gently so that they are well coated with the spices, but do not break. Let it cook over medium heat for 2-3 minutes, allowing the idlis to absorb all the flavors.
Turn off the heat, add the coriander leaves and lemon juice, and mix well.
