Easy Recipe for Makka-Methi Paratha: If you are bored of eating potato (aloo) or cauliflower (gobhi) parathas every day, why not try something new? A hot, freshly cooked paratha on a winter morning is the perfect way to start your day. Made with a combination of corn flour (makka atta) and fresh fenugreek leaves (methi), these parathas are absolutely delicious. Crispy on the outside and flavorful on the inside, they taste wonderful when served with yogurt, butter, or pickles. Let’s look at an easy recipe to make these crispy Makka-Methi parathas.

You don’t need many ingredients to make Makka-Methi parathas; you can easily prepare them using a few common pantry staples:
1 cup corn flour (makka atta)
1 cup fresh, chopped fenugreek leaves (methi)
Salt to taste
Red chili powder to taste
Carom seeds (ajwain) to taste
Warm water (as needed)
Oil or ghee (for cooking the parathas)
Start by taking the corn flour in a large mixing bowl and adding the finely chopped fresh fenugreek leaves. Add salt, red chili powder, and carom seeds according to your taste, and mix everything well. Gradually add warm water and begin kneading the dough. Keep in mind that corn flour does not bind as easily as wheat flour, so add the water slowly rather than all at once. Knead until the dough is soft and uniform, making it easier to shape into parathas.
Once the dough is ready, divide it into small portions (balls). Since corn flour tends to be a bit crumbly, be careful when rolling them out. You can shape them by gently patting them with your hands or by placing the dough ball between two sheets of plastic and pressing it into a round shape. Next, heat a griddle (tawa) over medium heat and apply a little ghee or oil to it. Place the prepared paratha on the griddle and cook it thoroughly over medium heat.
Once the paratha is well-cooked on one side, carefully flip it over. Apply a little ghee or oil to the other side as well, and continue cooking until both sides turn golden brown. Once light golden spots appear on the paratha and it is fully cooked, remove it from the griddle. Prepare the remaining parathas in the same way.

Your delicious Makka-Methi (corn and fenugreek) parathas are now ready. Slightly crispy on the outside and soft on the inside, these parathas are packed with the authentic flavors of corn flour and fresh fenugreek leaves. Serve them piping hot to best enjoy their taste. You can also add a dollop of butter on top and enjoy them with fresh yogurt, green chutney, mango pickle, or a cup of tea.
