The specialty of the Sev-Tomato curry is its spicy, sour, and slightly sweet flavor. The tanginess of the tomatoes, the pungency of the spices, and the unique texture of the crispy Sev added at the end make it distinct from dal-rice or plain vegetables. It's especially great for those days when there aren't any green vegetables in the fridge or you don't have much time to cook.

Ingredients for Sev-Tomato Curry
You'll need just a few basic ingredients to make this curry:
Tomatoes: 3-4 (finely chopped)
Sev: 1 bowl (medium or thick)
Spices: Turmeric, red chili powder, coriander powder, garam masala
Tadka: Cumin seeds, asafoetida, oil
Other: Salt, sugar/jaggery (to taste), coriander leaves (for garnishing)
Method for Sev-Tomato Curry
First, heat oil in a pan. Add cumin seeds and a pinch of asafoetida. After the cumin seeds crackle, add chopped tomatoes. When the tomatoes soften slightly, add turmeric, red chili, and coriander powder, and mix well.

Now add about one to one and a half cups of water. Add salt to taste and a little sugar or jaggery to balance the sweet and sour. Let the gravy cook over medium heat for 5-7 minutes, allowing the spices and tomato flavors to fully infuse.
This is the most important step. When the gravy thickens and you're ready to serve, add the sev. If you add the sev beforehand, it will melt completely and lose its crispness. Immediately turn off the heat, garnish with coriander leaves, and serve with hot roti, paratha, or rice.
