Ragi Recipes: Ragi, also known as *nachni* (finger millet), is considered a healthy grain. Rich in calcium, fiber, iron, and other essential nutrients, it is recommended as part of a balanced diet. However, even if you do not enjoy *ragi roti* or plain ragi flour, there are many delicious ways to incorporate it into your diet. A variety of easy dishes—ranging from sweet to savory—can be prepared using ragi. Let’s explore five healthy and tasty recipes:

1. Ragi Dosa
Ragi dosa is a delicious breakfast option. To make it, prepare a thin batter by mixing ragi flour, rice flour, and a little curd (yogurt). Add salt and let the mixture rest for a while. Spread the batter onto a hot griddle (*tawa*), add a little oil, and cook until golden brown on both sides. Serve with coconut chutney or *sambar*.
2. Ragi Chilla
If you want to prepare a quick breakfast, try *ragi chilla*. Mix finely chopped onion, tomato, green chili, coriander, cumin seeds, and salt into the ragi flour. Add water to prepare the batter. Spread it on a hot griddle, apply a little oil, and cook on both sides. Enjoy it with curd or green chutney.
3. Ragi Pancake
You can also make sweet pancakes using ragi. Mash a banana into the ragi flour and prepare a batter using milk or water. For flavor, you can add a little cinnamon powder and some dry fruits. Cook small pancakes on the griddle. This is also a great breakfast option for children.
4. Ragi Upma
A delicious *upma* can be made by using ragi instead of semolina (*sooji*). Sauté mustard seeds, curry leaves, peanuts, and vegetables in a little oil in a pan. Then, add the ragi flour, roast it lightly, and stir continuously while adding water. Your piping-hot Ragi Upma will be ready in just a few minutes.

5. Ragi Ladoo
If you have a sweet tooth, you can make Ragi Ladoos. Lightly roast the ragi flour and mix in jaggery, a little ghee, and chopped nuts. Let the mixture cool slightly and shape it into small ladoos. Be mindful not to use excessive amounts of jaggery and ghee.
