Mithilanchal is renowned for its unique culinary traditions. People here often prepare various dishes like *Bhakka*, *Tarua*, and delicious chutneys to accompany their meals—dishes that are not only tasty but also highly beneficial for health. Today, we are sharing the recipe for a special *Moong Dal* (split green gram) chutney from Mithila; it is incredibly delicious and healthy.

**A Delicious *Moong Dal* Chutney**
*Moong Dal* chutney is currently a favorite in Mithila. With the fresh *Moong* harvest recently in, people are stocking up on it for the year. This chutney tastes especially delicious when paired with piping hot *rotis*. That is why people in rural areas often prefer preparing it for dinner.

**Easy Preparation Method**
First, lightly roast the whole *Moong* beans in a dry pan or *kadhai* (wok) without any oil; roasting imparts a wonderful, earthy, and nutty aroma. Next, boil the *Moong* in a pressure cooker with a little water for 4–5 whistles (alternatively, you can boil it in an open vessel). Once the *Moong* is thoroughly cooked, transfer it to a plate. Now, add salt to taste, finely chopped raw onion, green chilies, a little raw mustard oil, and lemon juice.

**The Chutney is Ready**
Mix all these ingredients together, mashing them well by hand. Enjoy this *Moong* chutney with hot *rotis* smeared with *Ghee* (clarified butter). Believe us, once you taste it, you will want to make it again and again. It takes only 20 to 25 minutes to prepare.

**Highly Beneficial for Health**
It is a popular choice for dinner in rural areas. From a health perspective, this chutney is extremely beneficial, as it does not require any spices or excessive oil. Moong beans are rich in protein, while the added lemon (Vitamin C), raw onion, green chili, and mustard oil are considered excellent for digestion and health.
