Italian food is known worldwide for its delicious flavors, and among them, red sauce pasta is a favorite among Indians. The tanginess of tomatoes, the aroma of garlic, and the spiciness of the spices make this pasta truly special.

Many people think it's difficult to replicate restaurant-quality taste at home, but with the right technique and fresh ingredients, you can prepare it in minutes. Let's learn the step-by-step recipe for making delicious red sauce pasta at home.
Ingredients
Pasta - 2 cups of pasta, water, and one teaspoon of salt
For the sauce - 4-5 ripe red tomatoes, 1 tablespoon finely chopped garlic, 1 medium onion (finely chopped)
Spices - 1 teaspoon chili flakes, 1 teaspoon oregano or Italian herbs, half a teaspoon black pepper powder, and salt to taste
Other - 2 tablespoons olive oil, 1 teaspoon butter, 2 teaspoons tomato ketchup, and plenty of mozzarella cheese
Instructions
First, boil 4-5 cups of water in a large pot. When the water starts boiling, add salt and the pasta. Cook the pasta until it's 80-90% done, not completely cooked. Once the pasta is cooked, reserve one cup of the pasta water and drain the rest. Rinse the pasta with a little cold water to prevent it from sticking together.
Fresh tomato sauce is best instead of store-bought sauce. To make it, make a small cut on the top of the tomatoes and put them in boiling water for 5 minutes. Then peel them and blend them into a smooth puree.
Now, heat oil and butter in a pan. Add the finely chopped garlic and sauté until golden brown. Now add the onion and cook until soft. Add the prepared tomato puree and cook until the oil starts to separate.

After the sauce thickens, add salt, black pepper, chili flakes, and oregano. Add tomato ketchup to balance the sweet and sour flavors. Now add the boiled pasta and the reserved pasta water.
Next, cook the pasta with the sauce over low heat for 2 minutes. Sprinkle grated cheese on top, cover, and let it sit for 1 minute to allow the cheese to melt completely.
