Sawan is incomplete without this Rajasthani sweet; here is how you can make sweet and crispy Feni at home..

Rajasthan is renowned not only for its attire and culture but also for its cuisine. When it comes to sweets, *Pheni*—along with *Ghevar*—is a name that immediately comes to mind. *Pheni* is a thread-like sweet delicacy prepared especially during the month of *Sawan* (monsoon season).

Its fibrous texture melts in the mouth, and its taste is so exquisite that it leaves everyone craving more. If you wish to enjoy *Pheni* this *Sawan*, here is a simple recipe to make it at home.

**Ingredients for Pheni:**
All-purpose flour (Maida): 2 cups
Desi Ghee: 1 cup
Rice flour: 2-3 tablespoons
Sugar: 1.5 cups
Milk: As required
Water: 1 cup (for sugar syrup)
Cardamom powder: 1/2 teaspoon
Saffron and dry fruits: For garnishing

**Method to Prepare Pheni:**

First, add 2-3 tablespoons of *desi ghee* to the all-purpose flour and knead it into a very soft dough using lukewarm water. Cover and let it rest for 15-20 minutes.

In a small bowl, mix the rice flour and *ghee* to create a smooth paste.

Roll out a portion of the kneaded dough, apply the prepared paste over it, and place another rolled-out layer on top.

Repeat this process 3-4 times to create multiple fine layers. Then, gently stretch these layers to form thread-like strands and coil them into a round, nest-like shape.

Heat *ghee* in a deep pan (kadhai), add the prepared *Pheni* coils, and fry them over a very low flame until they turn golden brown. Once the Pheni turns golden in color, remove it and set it aside to drain off any excess ghee.

Next, heat water and sugar in a pan; add cardamom powder and saffron strands to prepare the sugar syrup.

Allow the syrup to cool slightly. When the syrup is still warm, dip the Pheni into it and remove it after one minute.

Garnish with pistachios, almonds, and a few strands of saffron.

You can serve the prepared Pheni with milk or without it; it tastes delicious either way.
