Raksha Bandhan Special Barfi: For Raksha Bandhan, sisters often buy sweets from the market, but this time, you can make them yourself at home. A delicious *barfi* can be prepared by combining semolina (*suji*) and gram flour (*besan*) with ghee, milk, and saffron. The best part is that it is easy to make and takes just a few minutes. Neha Kumari, a homemaker from Ranchi, has explained the process beautifully.

First, heat three tablespoons of ghee in a pan. Add cashews, raisins, and any other dry fruits of your choice; fry them briefly and set them aside in a bowl. Next, add the semolina to the same ghee and roast it lightly.

Now, mix four tablespoons of gram flour (*besan*) with the semolina and roast both ingredients well until they turn golden brown. You can add a little more ghee if needed.

After that, pour thick, creamy milk and half a teaspoon of ghee into the pan. Cook while stirring continuously until all the milk evaporates and the mixture thickens to a consistency similar to *halwa*.

Next, grease a plate with a little ghee or line it with butter paper. Transfer the mixture from the pan to the plate and spread it evenly into a thick, round layer (like a *roti*). Garnish the top with the fried dry fruits.

Leave the mixture to set under a fan for 1–2 hours. Once it has set firmly, use a knife to cut it into *barfi* shapes. There you have it—your delicious homemade *barfi* is ready! Enjoy it yourself and serve it to your friends and relatives.
