The month of Sawan holds great significance in Hinduism. Ushered in by the first showers of the monsoon, this holy month brings with it abundant joy, devotion, and enthusiasm. In Indian tradition, there is something truly special about starting an auspicious task or a new day with a sweet treat.

If you are planning to make something sweet on the first day of Sawan—July 30, 2026—nothing beats 'Gulgule'. This is a classic, delicious, and popular dish from North India. The best part is that you don't need to buy any expensive ingredients from the market; it can be quickly prepared using simple wheat flour and jaggery (gur) already available in your kitchen.

**Ingredients Required for Gulgule**
Wheat flour: 1 cup
Jaggery: ½ cup (finely crushed)
Fennel seeds (Saunf): 1 teaspoon (lightly crushed)
Green cardamom powder: ½ teaspoon
Water: For the batter (approximately ¾ cup)
Baking soda: 1 pinch (to make the Gulgule fluffy)
Desi ghee or refined oil: For frying

**Easy Method to Make Gulgule**
First, place the finely crushed jaggery and a little water in a small vessel. Stir with a spoon until the jaggery dissolves completely. You can warm the mixture slightly to help the jaggery melt faster, but ensure it cools down completely before use. Strain the jaggery water through a sieve to remove any impurities.

Next, take the wheat flour in a large mixing bowl. Add the crushed fennel seeds and cardamom powder, and mix well using a dry spoon. Fennel seeds impart a wonderful flavor and aroma to the Gulgule.

Now, gradually add the jaggery water to the flour while whisking continuously with your hands or a spoon. Ensure that no lumps form in the batter. The batter should be neither too thick nor as thin as water; its consistency should resemble that of *pakora* (fritter) batter.

Cover the prepared batter and let it rest for 10 to 15 minutes; this allows the flour to set properly. After 15 minutes, add a pinch of baking soda and whisk the batter vigorously for 2–3 minutes. Doing this ensures the *gulgules* turn out light, fluffy, and soft.

Next, place a deep pan (*kadhai*) on the stove and heat oil or *desi ghee* in it for frying. Once the oil is hot, reduce the heat to medium. Carefully drop small portions of the batter into the hot oil using your hand or a spoon.

Keep turning the *gulgules* occasionally with a slotted spoon. Fry them until they turn a lovely golden-brown color on all sides. Remove the finished *gulgules* and place them on a plate lined with tissue paper to drain off any excess oil.
