**Ingredients**
Oats – 1.5 cups
Ripe Banana – 1
Milk – 1/2 cup
Egg – 1
Baking Powder – 1 teaspoon
Cinnamon Powder – 1/2 teaspoon
Vanilla Extract – 2-3 drops
Salt – A pinch
Honey or Maple Syrup – For topping
**Preparation Method**
First, place the dry oats into a blender or mixer and grind them into a fine powder. Ensure that the flour is not too coarse; otherwise, the pancakes may fall apart. If you already have oat flour on hand, you can use that directly.
In a large bowl, mash the ripe banana. Now, add the egg, milk, and vanilla extract, and whisk the mixture thoroughly. Once the wet ingredients are well combined, add the ground oats, baking powder, cinnamon, and a pinch of salt. Continue mixing until all lumps have disappeared.
If the batter appears too thick, add a little more milk to reach the desired consistency. Let the batter rest for 5–10 minutes to allow the oats to absorb the moisture.
Now, heat a non-stick pan over medium heat and lightly grease it with butter. Pour a large spoonful of the batter into the pan. There is no need to spread it out too much; simply let it take its own shape. Once small bubbles begin to appear on the surface of the pancake, carefully flip it over. Cook the other side until it turns golden brown as well.
Transfer the finished oatmeal pancake to a plate. Top it with freshly sliced fruits, such as strawberries, blueberries, or banana slices. Drizzle a little honey or maple syrup over the top for sweetness. You may also sprinkle some nuts over it.
