Today, we bring you a famous South Indian recipe, loved throughout India. Yes, we're talking about Vegetable Appam, which are crispy on the outside and soft and fluffy on the inside. The best part is, they can be prepared in minutes.

The biggest advantage of Appam is that it uses very little oil. Made with semolina and fresh vegetables, it's light and easy to digest. If your children are fussy eaters and refuse to eat vegetables, this dish is the smartest way to get them to eat their greens. So, let's get started with this easy recipe.

Ingredients for Vegetable Appam:
Semolina: 1 cup
Yogurt: ½ cup (slightly sour yogurt is even better)
Vegetables: 1 onion, 1 tomato, 1 bell pepper, a little carrot (all finely chopped)
Spices: Salt, black pepper, and green chilies (to taste)
Tempering: Mustard seeds and curry leaves
Magic Ingredient: 1 teaspoon baking soda

Method for making Vegetable Appam:
First, mix the semolina and yogurt in a large bowl. Add a little water to make a thick batter (just like idli batter). Now cover and let it rest for 10-15 minutes so that the semolina swells up nicely.

Now add all the chopped vegetables, salt, and chili to the batter. If you want to take the flavor to the next level, heat some oil in a small pan, add mustard seeds and curry leaves, and add this tempering to the batter. Remember, add the baking soda just before cooking and mix gently; this will make the appam fluffy.

Next, place the appam pan on the stove and add a drop of oil to each mold. Now fill the molds with the batter using a spoon. Cover and cook on low heat for 2-3 minutes. When they turn golden brown on the bottom, flip them over and cook the other side as well. And just like that, your super-tasty and healthy vegetable appams will be ready.
