We often discard the peels while preparing ridge gourd (torai) curry, even though these very peels are packed with nutrients. Ridge gourd peels contain fiber, iron, and vitamins, all of which aid in improving digestion. When prepared correctly, a dish made from these peels is not only delicious but also a healthy and zero-waste recipe. Let's learn how to make it using this simple method.

**Ingredients**
Ridge Gourd Peels – 2 cups (thoroughly washed)
Onion – 1 medium (finely chopped)
Green Chilies – 1–2 (finely chopped)
Garlic – 3–4 cloves (chopped)
Mustard Oil / Refined Oil – 2 tablespoons
Cumin Seeds (Jeera) – ½ teaspoon
Turmeric Powder – ½ teaspoon
Coriander Powder – 1 teaspoon
Red Chili Powder – To taste
Salt – To taste
Dry Mango Powder (Amchur) or Lemon Juice – A small amount
Fresh Coriander Leaves – For garnish
**Preparation Method**
**Preparing the Peels**
Thoroughly wash the ridge gourd peels and cut them into thin strips. If the peels seem particularly tough, you may soak them in lightly salted water for 5 minutes.
**Heat the Oil**
Heat the oil in a pan or wok (kadai). Once the oil is hot, add the cumin seeds. As the cumin seeds begin to splutter, add the chopped garlic and green chilies, and sauté until they turn a light golden color.
**Sauté the Onions**
Now, add the finely chopped onion and sauté over medium heat until it turns a light brown color.
**Add the Spices**
Add the turmeric powder, coriander powder, red chili powder, and salt to the pan. Sauté the spices well to ensure their raw flavor is cooked out.
**Add Peels and Cook**
Now, add the chopped ridge gourd peels and mix everything thoroughly. Cover the pan and cook on low heat for 8–10 minutes. Stir occasionally to prevent sticking. If needed, you may add 1–2 tablespoons of water.
The Finishing Touch
Once the peels have softened, add a little dry mango powder (amchur) or lemon juice. Garnish with fresh coriander leaves and turn off the heat.

Serving Suggestion
Serve the ridge gourd peel curry piping hot alongside rotis or parathas. If you prefer, it can also be enjoyed with dal and rice.
