- Afterward, heat the mustard oil in a pan (or *kadhai*). Once the oil is hot, add the cumin seeds. As the cumin seeds begin to splutter, lightly sauté the ginger-garlic paste. Now, add the turmeric powder, red chili powder, and the coriander paste. Mix the spices thoroughly for 2–3 minutes to cook out their raw flavor.
