For stuffing

Boiled potatoes – 6
Red chilli powder – 1/2 tsp
Chopped green chillies – 2
Chaat masala – 1 tsp
Coriander leaves – 1 tbsp
Salt – according to taste

For kulcha

Refined flour – 2 cups
Curd – 1/2 cup
Baking soda – 1/2 tsp
Sugar powder – 2 tbsp
Dry flour
Salt – according to taste

Method

- First of all, boil the potatoes and then peel them and mash them in a vessel.

- Now add red chilli powder, garam masala, chaat masala, chopped green chillies, coriander leaves, and salt to the mashed potatoes and mix well.

- Now take another vessel and put refined flour in it. Now add sugar, baking soda, curd, and salt according to taste to the refined flour and mix.

- Now add water little by little and prepare a soft dough by kneading it. After kneading the dough, keep it aside for 20 minutes.

- After the stipulated time, take the dough and add one spoon of oil to it, and knead it well once again. Now prepare big balls of dough.

- Now take a big ball and press it lightly. Now apply dry flour to it and roll it a little thicker. Now put one spoon of potato mixture in it and pack it from all sides and make a ball.

- Now put coriander leaves on one side of the ball and press it. After this, turn the ball and apply some flour to it, and roll it in the shape you want.

- Now heat a non-stick pan/tawa on medium flame. Now, apply a little water to the rolled kulcha and put it in the pan. Apply it on the side where the coriander leaves are not applied.

- By applying water, the kulcha will stick well on the pan. When the kulcha is cooked well on one side, turn the pan upside down on the gas flame.

- By doing this, the kulcha on the coriander side will also be cooked well. When the kulcha is cooked well, remove it from the pan and apply butter to it. Prepare kulchas from all the dough balls in the same way.
