People often complain that kachoris don't turn out crispy at home, or that they become soft when they cool down. The secret lies in the 'moyen' (shortening) and the frying technique. In this recipe, we will use the little tricks that professional sweet makers use. Let's learn this easy recipe.

Ingredients for Moong Dal Kachori
To make this, you will need:
For the dough: 2 cups all-purpose flour, 4-5 tablespoons ghee or oil (for shortening), salt to taste, and a little carom seeds (ajwain).
For the spicy filling: 1 cup yellow moong dal (soaked for 2-3 hours and coarsely ground), 2 tablespoons gram flour (besan), fennel seeds (crushed), coriander powder, red chili powder, asafoetida (hing), dry mango powder (amchur), garam masala, and salt.
Method for making Moong Dal Kachori
First, add salt, carom seeds, and ghee to the flour. Mix it well. Check by making a fist; if the dough holds its shape, the shortening is correct. Now, add a little water at a time and knead a stiff dough. Cover it with a damp cloth and let it rest for 15 minutes.
Heat oil in a pan. Add asafoetida and crushed fennel seeds (the real aroma comes from the fennel seeds). Now add gram flour and roast it. After that, add the coarsely ground moong dal and all the spices. Roast it until all the water from the dal dries up and a fragrant aroma is released.
Now, make small balls from the dough, flatten them slightly with your hands, and fill the dal mixture in the center. Seal the edges well and press with your palm to give it a kachori shape. Do not use a rolling pin; pressing with your hands is better.

Keep this in mind while frying:
This is where the magic happens! Fry the kachoris on a very low flame. The oil should not be too hot. Put the kachoris in the oil and let them rise to the surface on their own. It will take 10-12 minutes for them to become golden brown and crispy. Do not rush at all.
