It is impossible to talk about North Indian cuisine without mentioning Aloo Kulcha. These potato-stuffed flatbreads are incredibly delicious, especially when paired with spicy chole (chickpea curry).

If you are craving Aloo Kulcha but don't want to eat out, you can easily make them at home. Here is the recipe for making Aloo Kulcha at home.

Ingredients for Aloo Kulcha:
All-purpose flour (Maida): 2 cups
Yogurt (Curd): 3-4 spoons
Baking powder: 1/2 tsp
Baking soda: 1/4 tsp
Sugar: 1 tsp
Oil/Ghee: 2 spoons
Salt: To taste
Lukewarm water/milk: For kneading the dough
Boiled potatoes: 4
Finely chopped onion: 1 small
Green chilies: 2
Ginger: 1 inch piece
Fresh coriander: Finely chopped
Carom seeds (Ajwain): 1/2 tsp
Whole coriander seeds: 1 tsp
Dry mango powder (Amchur): 1/2 tsp
Red chili powder: 1/2 tsp
Garam masala: 1/2 tsp
Salt: To taste
Fresh coriander
Nigella seeds (Kalonji)
Method for making Aloo Kulcha:
First, sift the all-purpose flour into a large bowl. Add salt, sugar, baking powder, baking soda, yogurt, and 2 spoons of oil, and mix well.
Now, knead a soft dough using lukewarm water or milk; knead it thoroughly for 4-5 minutes.
After that, apply a little oil to the dough, cover it with a damp cloth, and let it rest for 1 to 1.5 hours. Now, take the mashed potatoes in a bowl and mix in the chopped onion, green chili, ginger, fresh coriander, and all the dry spices.
Next, take a medium-sized ball of dough and flatten it slightly using your hands or a rolling pin. Place two spoonfuls of the potato filling in the center, then gather the edges to seal it shut.

Dust the dough ball with a little dry flour and roll it out gently into a round shape. Afterward, sprinkle some chopped coriander and nigella seeds (kalonji) over the kulcha and press them down lightly with the rolling pin.
Heat an iron tawa (griddle) over high heat. Flip the kulcha over, apply a generous amount of water to the back side, and place it onto the hot tawa.
Once small bubbles begin to appear on the surface, hold the tawa by its handle, flip it upside down, and roast the kulcha directly over the flame, rotating it until characteristic tandoori-style charred spots appear.
After roasting, remove the kulcha from the tawa, brush it with butter, crush it slightly with your hands, and serve it with chole.
