If you happen to have some leftover rotis (flatbreads) after dinner, you often don't feel like eating them again, and they end up going to waste. But did you know that you can use these leftover rotis to make delicious and crispy Paneer Tacos?

Yes, you can easily make tacos at home using leftover rotis—a treat that both children and adults are sure to love. Let's discover this incredibly simple recipe for making Paneer Tacos from day-old rotis.

**Ingredients for Tacos**
Leftover Rotis: 4 to 5
Paneer (Indian Cottage Cheese): 200 grams
Vegetables: 1 finely chopped onion, 1 capsicum (bell pepper), ½ cup boiled corn
Sauces and Spreads: 2 tablespoons mayonnaise, 2 tablespoons tomato ketchup, 1 tablespoon green chutney
Spices: ½ teaspoon chili flakes, ½ teaspoon oregano, ¼ teaspoon black pepper powder, salt to taste
Cheese: ½ cup
Butter or Oil: For toasting

**Method for Making Paneer Tacos**
First, heat a tablespoon of oil or butter in a pan. Add the finely chopped onions and sauté until they turn a light pink color. Now, add the capsicum and boiled corn, and cook the vegetables over high heat for 2 minutes. Ensure that the vegetables retain their crunch.

Next, add the paneer cubes, chili flakes, oregano, black pepper powder, and salt to the pan. Mix everything thoroughly, sauté for 1–2 minutes, and then turn off the heat. The paneer filling for the tacos is now ready.

Now, in a small bowl, mix the mayonnaise, tomato ketchup, and green chutney to create a delicious sauce. This sauce will give our tacos a tangy and creamy flavor.
Now, take one of the leftover rotis. Spread the prepared sauce generously over one half of the roti. Now, place a thick layer of the prepared paneer and vegetable stuffing over this sauce. Sprinkle a generous amount of grated cheese on top. Next, fold the other empty half of the roti over the stuffing so that it takes on a crescent-moon shape.

Heat a little butter or oil on a griddle (tava). Place the prepared stuffed roti on the griddle and cook it over low heat on both sides until it becomes perfectly crispy and the cheese inside has melted thoroughly.

If you wish, you can give it a complete 'Desi-fusion' twist by adding a little Chaat Masala or Tandoori Mayonnaise to the stuffing.

Your piping hot, crispy, and cheese-filled Roti Paneer Taco is now ready. Cut it in half and serve it with tomato ketchup or a spicy mint chutney.
