In the rural areas of the Lakhimpur Kheri district in Uttar Pradesh, traditional food customs still hold great significance. Whether it is a festival, a special occasion, or the arrival of guests, the tradition of preparing *kheer* (a sweet rice pudding) remains very much alive. Notably, making *kheer* does not require an elaborate list of ingredients or complex preparations; it can be easily crafted using milk, rice, and a few dry fruits—all of which are typically available at home. Its taste is cherished by everyone, from children to the elderly.

Nowadays, people increasingly prefer homemade, traditional sweets over those purchased from the market, and *kheer* serves as an excellent choice. The richness of the milk cream, the thick consistency provided by the rice, and the addition of cashews, almonds, and *makhana* (fox nuts) make it truly special. It is quick to prepare and requires only basic kitchen staples.
**Starting with Milk and Rice**
To begin, you will need milk and rice. Pour the milk into a large vessel and place it on the stove to heat. Once the milk starts to boil, reduce the heat. Next, add the rice—which should be rinsed two to three times in clean water—to the milk. Stir the mixture occasionally to ensure the rice does not stick to the bottom of the vessel. Let the *kheer* cook over a low flame for about 20 minutes; during this time, the rice will gradually swell, and the milk will thicken.
**Enhancing Flavor with Cashews, Almonds, and Makhana**
The longer the *kheer* is cooked over a low flame, the more its flavor develops and shines. Once the rice is thoroughly cooked, it is time to add the dry fruits. Chop coconut, cashews, almonds, and pistachios into small pieces. You can also lightly roast the *makhana* and break them into smaller pieces before adding them to the dish. Now, add all these ingredients to the milk and rice mixture.
After adding the nuts, stir the kheer well so that their flavors blend thoroughly into the milk. Next, add sugar to taste and a little cardamom powder. Adding cardamom imparts a pleasant aroma to the kheer and enhances its traditional flavor.
An Easy Way to Make Kheer
Muskan explains that kheer is a dessert that can be prepared very easily at home; it does not require any special or elaborate ingredients. Begin by heating milk in a large pot. Then, add rice—rinsed well in clean water—and let it cook for about 20 minutes. Once the rice is fully cooked, add coconut, cashews, almonds, pistachios, and makhana (fox nuts).

She suggests that after mixing everything well, add sugar to taste and let it cook for a while over a low flame. Once the milk has thickened and all the ingredients are well incorporated, turn off the heat. In this way, a delicious nut-based kheer is ready to be enjoyed at home. It can be served either piping hot or chilled.
