Once you try it, you’ll want to make it again and again—learn the recipe for this delicious, special poha..

If you are looking for something light, delicious, and quick to prepare for breakfast, 'special poha' is an excellent choice. Particularly popular in Madhya Pradesh and Maharashtra, poha is as nutritious as it is tasty. The combination of vegetables, peanuts, and spices makes it truly special. Let’s look at an easy method to prepare this delicious special poha at home.

Ingredients
Poha (thick variety) – 2 cups
Onion – 1, finely chopped
Potato – 1 small, finely chopped
Green peas – ¼ cup
Peanuts – ¼ cup
Green chilies – 2, finely chopped
Curry leaves – 8–10
Mustard seeds – 1 tsp
Turmeric powder – ½ tsp
Sugar – 1 tsp
Salt – to taste
Lemon – 1
Fresh coriander leaves – 2 tbsp, chopped
Sev (crispy chickpea noodles) – for garnishing
Oil – 2 tbsp

Preparation Method
First, place the poha in a colander and rinse it gently with water. Be careful not to leave the poha in the water for too long, as it may become too soft and start to break. After rinsing, mix in the salt and turmeric powder, and set it aside for 10 minutes.

Next, heat oil in a pan. Add the peanuts and roast them until golden brown, then remove and set aside. In the same oil, add the mustard seeds. Once they begin to crackle, add the curry leaves and green chilies, and sauté for a few seconds.

Add the chopped onion and cook until it turns light pink. Then, add the potatoes and sauté for 4–5 minutes. Once the potatoes are nearly cooked, add the green peas and cook for another 2 minutes, stirring occasionally.

Finally, add the prepared poha to the pan and mix well with the other ingredients. Add the sugar and cook over low heat for 3–4 minutes. Stir gently from time to time to ensure the poha does not break. Once the poha is thoroughly heated, turn off the gas. Add roasted peanuts, fresh coriander leaves, and lemon juice, then mix well.

Serving suggestion
Transfer the prepared special poha onto a plate. Garnish with sev, pomegranate seeds, and a little fresh coriander. It tastes even better when served alongside a hot cup of tea.

Special tips
If you wish to make the poha more nutritious, you can add ingredients like carrots, bell peppers, or sprouted mung beans. This will enhance both the flavor and the nutritional value. This dish is a hit with both children and adults, making it a perfect choice for breakfast.
