Ingredients for Ghee Podi Idli
10-12 mini idlis
2-3 tablespoons ghee
3-4 tablespoons idli podi
1 teaspoon mustard seeds
1-2 dry red chilies
8-10 curry leaves
1 pinch asafoetida (hing)
A little salt
How to make Ghee Podi Idli
1. To make Ghee Podi Idli, first prepare the idlis. Pour the idli batter into molds, steam them, and set the cooked idlis aside. You can also use pre-made idlis. Mini idlis work best for this recipe as they get evenly coated with the podi and ghee.
2. Place a pan or wok on the stove and add ghee. Once the ghee is hot, add the mustard seeds. When the mustard seeds begin to splutter, add the dry red chilies, curry leaves, and asafoetida. Sauté for a few seconds, ensuring they do not burn.
3. Now, lower the heat and add the idli podi. Mix the podi well with the ghee. Then, add the mini idlis to the pan and toss gently so that each idli is well-coated with the mixture.
4. Sauté the idlis on a low flame for 2-3 minutes. This allows the flavor of the podi to infuse into the idlis and creates a delicious ghee-podi coating. If you prefer crispy idlis, you can sauté them in the pan for a little longer.

How to Serve
Serve the prepared Ghee Podi Idli piping hot with coconut chutney, peanut chutney, or sambar. You can also drizzle a little extra ghee and sprinkle some more podi over the top before serving. When preparing this for children, adjust the quantity of podi and chili according to their taste preferences.
