Mawa Gujiya Recipe: For any special occasion at home, Mawa Gujiya holds a unique place on a platter of sweets. With a crispy outer shell and a sweet Mawa (milk solids) filling inside, these Gujiyas are truly delicious. Sometimes, when making them at home, the outer layer can turn out too hard, or the Gujiyas might develop cracks after frying. This can happen due to the way the dough is kneaded, the moisture content in the filling, or an incorrect oil temperature during frying.

If you are planning to make Mawa Gujiya at home, keeping a few small details in mind will help you get them just right. Let’s look at the ingredients and the preparation method.
Ingredients for Mawa Gujiya
This recipe uses ingredients that are easily available at home.
For the dough:
1. All-purpose flour (Maida) – 2 cups
2. Ghee – 4 tablespoons
3. Water – as needed
For the filling:
1. Mawa (milk solids) – 1 cup
2. Powdered sugar – ½ cup (or to taste)
3. Chopped almonds – 2 tablespoons
4. Chopped cashews – 2 tablespoons
5. Raisins – 1 tablespoon
6. Cardamom powder – ½ teaspoon
7. For frying – Ghee or oil, as needed
How to make Mawa Gujiya
1. First, prepare the dough
Take the all-purpose flour in a large bowl. Add the ghee and mix well. Gradually add water and knead into a firm dough. The dough should not be too soft; otherwise, the Gujiyas might lose their shape during preparation. Cover the dough and let it rest for about 20 minutes.
2. Prepare the Mawa filling
Place the Mawa in a pan and roast it over low heat. Stir it continuously to ensure the Mawa does not stick to the bottom of the pan. Once the raw flavor of the *mawa* (khoya) has dissipated, turn off the heat and allow it to cool. Once the *mawa* has cooled completely, mix in powdered sugar, chopped cashews and almonds, raisins, and cardamom powder. Be careful—adding sugar to warm *mawa* can cause the filling to become moist or runny.
3. Shaping the *Gujiya*
Divide the dough into small portions and roll them out into thin, circular discs (*puris*). Place the *mawa* filling in the center of each disc. Lightly dampen the edges with water, then fold the disc in half. Press the edges firmly together with your fingers to seal them, ensuring the filling does not spill out during frying. You may also use a *gujiya* mold if you prefer.
4. Frying over Low Heat
Heat *ghee* or oil in a deep pan (*kadhai*). Ensure the oil is not excessively hot before adding the *gujiyas*. Fry them slowly over medium-to-low heat. Remove them once they turn a light golden color. Frying over high heat may cause the *gujiyas* to brown too quickly on the outside, while the inner layers may remain undercooked.
