Kanji Vada Recipe: As soon as Holi arrives, various types of dishes start being prepared in people's homes. Eating fried food every day also affects people's health. Due to this, today we will tell you about a dish, by which your digestive system will be good and the taste in your mouth will also change.
We are talking about Kanji Vada here. Kanji Vada is very tasty to eat. It is sour and spicy, due to which the taste of the mouth changes completely after consuming it. It is specially prepared on Holi. It takes two to three days to make Kanji Vada. In such a situation, if you want it to be ready on Holi, then prepare it today itself.

Ingredients for making Kanji
Water – 1.5 liters
Mustard powder – 2 tablespoons
Asafetida – 1 pinch
Black salt – 1 teaspoon
Red chili powder – 1 teaspoon
Turmeric powder – ½ teaspoon
Salt – according to taste
Method of making Kanji
Before making vadas, you have to prepare kanji, because it takes two to three days to prepare. To prepare kanji, take water in a big vessel and add mustard powder, asafoetida, black salt, red chili powder, turmeric, and common salt.
Mix this mixture well fill it in a glass or earthen vessel and keep it in the sun for 2-3 days, so that it becomes sour. Keep mixing it two to three times a day. The day its taste starts to seem very sour to you, prepare the vadas on that day.
Ingredients for making vada
Urad dal – 1 cup (soaked for 6 hours)
Asafoetida – 1 pinch
Salt – according to taste
Green chilli – 2 finely chopped
Ginger – 1 small piece (grated)
Oil – for frying
Method of making vada
To make vadas, drain the water from the soaked urad dal and grind it. Do not make it too thin, let it be slightly coarse. Now add asafoetida, salt, green chili, and ginger to it and beat well, so that the batter becomes light and fluffy.
Heat oil in a pan and fry small vadas on medium flame, till they become golden brown. Soak the fried vadas in lukewarm water for 10 minutes, so that they become soft. Do not put it in cold water. Vadas can become tight due to cold water.
When to add vada to kanji
When both kanji and vada are ready, add the vadas soaked in hot water in the kanji. Keep it in the fridge for 3-4 hours so that the vadas absorb the full flavor of the kanji. Serve the cold kanji vadas and enjoy Holi!
