Ingredients for Urad Dal Khichdi:
1 cup urad dal
1/2 cup rice
1/2 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon asafoetida
1 green chili (chopped)
1 tablespoon ghee
1/2 teaspoon grated ginger
Salt to taste
4 cups water

Method:

To make urad dal khichdi, first, wash the urad dal and rice thoroughly. Then soak them for 15-20 minutes so that they cook faster. Now, heat the ghee in a pan. Add cumin seeds and asafoetida. When the cumin seeds start to splutter, add ginger and green chili and sauté well.

Now add turmeric powder and salt and mix well. Then add the soaked urad dal and rice and sauté for 2-3 minutes. Now add 4 cups of water and cover, and let it boil. When the water starts boiling, reduce the heat and let the khichdi cook for 15-20 minutes. Once the lentils and rice are well-cooked and the mixture reaches a porridge-like consistency, garnish it with ghee and serve with fresh coriander. Be sure to add a dollop of clarified butter (ghee) on top; this will enhance the flavor of the khichdi.
