Rajasthan has many famous dishes. But the Mirchi Vada is a great street food that makes everyone crazy. Hot chilies, spicy potato stuffing, and crispy gram flour layer. You can easily make it at home too.

Rajasthani Mirchi Vada Recipe:

Ingredients:

For the stuffing:

Boiled potatoes – 2 medium size (mashed)

Ginger-garlic paste – 1 tsp

Coriander powder – 1 tsp

Garam masala – ½ tsp

Dry mango powder – ½ tsp

Red chilli powder – ½ tsp

Salt – according to taste

Coriander leaves – finely chopped.

For the chili:

Large green chilies – 6-8 (slit from the middle, remove seeds if you want less spicy)

For the gram flour batter:

Gram flour – 1 cup

Celery seeds – ¼ tsp

Turmeric – ¼ tsp

Red chilli powder – ½ tsp

Salt – according to taste

Water – as required (to make a thick batter)

Baking soda – a pinch (for puffing, optional)

For frying:

Oil – for deep frying Method of preparation:

1. Prepare the stuffing:

Mash the boiled potatoes in a bowl. Add all the spices, coriander leaves and ginger-garlic paste to it. Mix well.

2. Prepare the chillies:

Slit the big green chilies from the middle. Now fill the potato stuffing in each chili.

3. Make the gram flour batter:
Mix all the spices, carom seeds, and baking soda in the gram flour. Add water and make a thick and smooth batter. Do not make lumps.

4. Fry:
Heat oil in a pan. Dip the stuffed chilies in the gram flour batter and deep fry them in hot oil until they become golden and crispy.

5. Serve:
You can serve the hot Mirchi Bada with green chutney, tamarind chutney or onion and salt-lemon. After it is prepared, eat it yourself and also feed it to everyone by mixing it. You will like it a lot, especially the children of the house will enjoy eating it. And kids will ask to make it again and again.
