Step-by-step guide: How to make Soan Papdi at home
Step 1: Preparing the flour mixture
First, heat half a cup of *desi* ghee in a heavy-bottomed pan (*kadhai*). Add the sifted gram flour and all-purpose flour to it. Roast the mixture over a low flame, stirring continuously. Roast until the raw smell disappears and a pleasant, nutty aroma fills the air. Be careful not to let the color get too dark. Once roasted, sift the mixture to ensure there are no lumps.
