Instructions
First, soak the almonds in water for at least 5-6 hours or overnight. If you are short on time, you can also boil the almonds in hot water for 15-20 minutes. After that, peel the almonds.

Put the peeled almonds in a blender. Add a little milk, about 2-3 tablespoons, and blend it to make a coarse paste. Make sure the paste is not too fine, as the real taste of almond halwa lies in its grainy texture.

Next, heat the ghee in a heavy-bottomed pan. A non-stick pan is preferable. When the ghee is slightly warm, add the almond paste. Now, roast it on low heat, stirring continuously. Roast it until its color turns light golden and the ghee starts separating from the sides. This may take about 10-15 minutes.

Once the almonds are well roasted, add the remaining milk and the saffron-infused milk. Mix it well so that there are no lumps. Now add the sugar and cook on low heat until the mixture thickens and starts to leave the sides of the pan.
